Eat This: Low Carb Chocolate Pudding…With A Surprise

I like to try things that push me out of my comfort zone. Why? Because I think that life is about discovery, and what better way to make discoveries than to do something very different? I’ve also learned (by keeping an open mind) that food, in particular, may not taste the way you expect – in fact, it may turn out to be much, much better!

The specific food to which I refer is Cauliflower Chocolate Pudding. Yeah, I know – it sounds strange, and there’s no way that a cauli-based pudding could be good, right? Wrong! So wrong. I admit that I was skeptical at first, but I’ve made other recipes that sounded very odd and turned out to be amazingly good, so I pushed the skepticism aside and jumped right in. And I’m so glad I did!

First, this is a very simple recipe: basically, you cook the cauliflower for a very short period in your pressure cooker, then blend it in a powerful blender (I use a Vitamix) with the cacao nibs and the other ingredients; my substitutions were unsweetened cocoa powder, coconut oil, and stevia. Properly blended, it’s smooth, creamy, incredibly chocolate-y, low carb, and dairy free. And the cauli? You can’t even taste it. You get the benefits of cauli in dreamy chocolate pudding!

Of course, this kind of discovery needed to be shared, so I posted it in a social media group that was focused plant-based eating. I understood that some people might think it sounded weird, but if you eat a plant-based diet, I would think you’d appreciate this kind of creativity…but I received surprising responses. While there were people who found the pudding intriguing, there were also those that just posted barfing emojis. Really?

I do understand that people often have strong individual preferences about food, and something that one person may adore, another may find revolting – but why not actually try it before you decide you won’t like it?

If you’ve prejudged this dish disgusting, you’ve missed out because you can’t or won’t consider the possibility that the pudding might be tasty. No worries, though – I’ll keep trying – and finding – delightful surprises like this one.

To the open-minded: do try this pudding, especially if you’re looking for an alternative to avocado-based pudding (tasty in its own right) – it’s just as creamy. One adventurous individual actually did try making the pudding after seeing my post and she let me know that both she and her husband enjoyed it…even though he’s not a cauliflower fan. Truthfully, I think that even kids really would be none the wiser about the nutritious vegetable serving as the base for this treat.

  1. No problem! I had a similar issue- finally figured out my Bluehost plug-in was blocking all comments and/or sending them to spam. As for the recipe, I will most definitely try it after the holidays!
