
I recently waxed rhapsodic about one bowl meals, but they really do deserve to be lauded! Another favorite quick meal of mine is tofu scramble. Easy, flexible, and nutritious, it’s a meal I enjoy on a regular basis.

You can probably tell that I like simple food: easy, with accessible ingredients, and not too many steps involved to make it are ideal – and tasty is a must. I think good, clean food really shines when it’s made simply. That’s why I’m a big fan of this quick but satisfying meal!

Still digging my new spiralizer here. It’s been a while since something so affordable cast its spell on me like this, but I actually look forward to using this simple manual appliance. I’m still on my noodle bowl kick, so I decided to branch out from daikon noodles (SO tasty!!) to golden beet noodles. Looking at what I had in my pantry and in the fridge, a take on Pad Thai just made sense.

I adore the Vietnamese vermicelli noodle bowls called Bún, and I have eaten my fair share of them at Vietnamese restaurants. With the other half of a fresh daikon radish just waiting in the fridge to be transformed, it made perfect sense to use my new spiralizer to make a “noodle” bowl inspired by this incredible dish.
